Orange Almond Biscotti Cookies

My brother, James Ellis is a Fitness Model and this month actually won a pretty big title. He is the World's Body-Building Fitness Pro. He competed in Canada and won the title for 2011! I am SUPER proud of him!! :) Way to go JW! 

Anyways, working in the fitness industry, he has many "fitness" friends. Today, we are featuring a recipe from Jamie Eason of Bodybuilding.com. You may have seen Jamie on the cover or represented in one of many Oxygen Fitness magazines. Orange Almond Biscotti Cookies - Watch Video!

Per Cookie:

• Calories: 31
• Carbs: 4 grams
• Fat: .4 grams
• Protein: 1.5 grams

Ingredients:

• 2 cups Oat Flour
• 1 cup Splenda, Truvia, or Ideal
• 1 tsp Baking Powder
• 1 tbsp Orange Extract
• ¼ tsp Salt
• ½ tbsp Almond Extract
• 4 Egg Whites
• 4oz baby food Applesauce

Directions:

1. Preheat oven to 350 degrees.
2. Mix dry ingredients (oat flour, baking powder, salt) together in a large bowl.
3. Mix wet ingredients (egg whites, Splenda, almond extract, orange extract, baby food applesauce) together in a medium bowl.
4. Add wet ingredients to dry ingredients and mix together.
5. Spray baking sheet with a non stick butter spray and spread mixture on sheet.
6. Bake for 20 min on middle rack.
7. Remove biscotti from oven and let cool for 10-15 minutes.
8. Cut dough down the middle and cut into about 13 slices.
9. Bake in oven for another 15-20 minutes.

Makes about 26 cookies.

In being chosen for a 12 week clinical study with Nutrilite, I had the privilege of learning first hand how to eat properly, supplement properly and incorporate a realistic exercise program for me. Here is just ONE of my favorite recipes! It's a great one for the summer. Healthy, filling & easy to clean up! Try it & enjoy!

FISH IN FOIL

INGREDIENTS:

• 3 oz. white fish
• 1 Tablespoon Olive Oil
• Salt, pepper & garlic powder
• 1/2 cup each carrots, celery, and red pepper, cut into strips
• Lemon wedges

PREPARATION:

• Heat oven to 400 degrees
• Place fish on foil and drizzle with olive oil.
• Sprinkle with seasonings and place vegetables on top.
• Close foil and place on cookie sheet and bake 8-10 minutes
• Remove from oven and unwrap. Sprinkle lemon on top. 

SERVES: 1

EXCHANGES: 3 protein, 3 fat, 1 vegetable

NO MORE Ear Infections!

While I was pregnant with Tyler Junior, I continued to take Nutrilite vitamins. My doctor was shocked at how great they were even as a Pre-Natal vitamin, and was happy for me to continue on them through pregnancy. After giving birth & finishing with the nursing season, I did not want Tyler Junior to go without Nutrilite in his system because he had remained so healthy.
